- 1 large Turkey (thawed)
- 2 tbsp Summer Savory
- 1 tbsp Paprika
- 1 tbsp Seasoning salt
- 2 tsp Garlic Powder
- 1 tsp Black Pepper
Directions

1Combine all the seasonings in a bowl

2Using your hands, gently loosen the skin from the meat of the turkey.

3Careful not to tear the skin.

4Using half of the seasonings and rub thoroughly under the loose skin directly onto the meat

5Now rub the remaining half of the seasonings directly onto the skin of the turkey

6Place turkey in a roasting pan and cover.

7If your roasting pan has a metal rack use that inside the pan

8Bake at 250F for 9 hours then remove lid and baste the turkey every 15 minutes for the last 1 hour to brown the skin.

9I do not stuff the turkey as there will be lots of liquid in the roasting pan.

10So lots of gravy, or use the liquid for soup stalk.

11Your choice.

12I cook mine overnight so you wake up to the smell of turkey and it frees up the oven for those busy Christmas diners.
