- 1 gal. pickles
- 1 pt. coarse salt
- lumps of alum (size of hickory nut)
- 5 c. vinegar
- 6 c. sugar
- 1 oz. whole allspice
- 1 oz. cinnamon sticks
- 1 oz. white mustard seed
- celery seed
- 2 more c. sugar
Directions

1Wash and split pickles.

2Put in jar with coarse salt.

3Cover with boiling water.

4Let stand 1 week.

5Take out soft pickles. Wash others and jar and cover with boiling water.

6Let stand 24 hours.

7Pour water off and measure pickles.

8Put back in jar and each gallon of pickles, take 1 lump of alum, then cover with boiling water.

9Let stand 24 hours.

10Pour off water and put back in jar.
