Ingredients

  • 1 gal. pickles
  • 1 pt. coarse salt
  • lumps of alum (size of hickory nut)
  • 5 c. vinegar
  • 6 c. sugar
  • 1 oz. whole allspice
  • 1 oz. cinnamon sticks
  • 1 oz. white mustard seed
  • celery seed
  • 2 more c. sugar

Directions

    Wash and split pickles.

    Put in jar with coarse salt.

    Cover with boiling water.
  4. 4
    Let stand 1 week.

    Take out soft pickles. Wash others and jar and cover with boiling water.

    Let stand 24 hours.

    Pour water off and measure pickles.

    Put back in jar and each gallon of pickles, take 1 lump of alum, then cover with boiling water.

    Let stand 24 hours.
  10. 10
    Pour off water and put back in jar.
