- 9 c. white flour
- 3 c. bread flour
- 2 Tbsp. salt
- 1 Tbsp. sugar
- 2 pkg. yeast
- 1/2 c. very warm water
- 1 tsp. flour
- 1 tsp. salt
- 4 c. hot water
Directions

1Dissolve yeast in very warm water, 1 teaspoon flour and 1 teaspoon sugar.

2Wait 5 minutes.

3Make a well in the 12 cups of flour.

4Pour in yeast mixture with some flour for a soft dough. Add 4 cups hot water.

5Work dough with hand.

6Cover and let rise to double in size, 1 to 2 hours.

7Punch down dough and knead 8 minutes.

8Let rise until double in size again.

9Bake at 400° for 40 minutes.

10Brush with hot water just before it comes out of the oven.

11Makes 2 large loaves.
