  • 1 c. sugar
  • 1 tsp. vanilla extract
  • 2 eggs
  • 2 c. all-purpose flour
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 large can crushed pineapple (undrained)
  • 1/2 c. firmly packed brown sugar
  • 1/2 c. flaked coconut
  • 1/2 c. pecans
  • Sauce (follows)

    Grease bottom of 9 x 12-inch pan. Combine sugar, vanilla and eggs in large mixer bowl; beat 2 minutes at medium speed. At low speed, add flour, soda, salt and pineapple and beat 1 minute. Pour into pan; sprinkle with mixture of brown sugar, coconut and pecans. Bake at 350° for 45 to 50 minutes. Just before cake is done, prepare sauce. Pour over warm cake. Cool before serving.
