Ingredients
- 3 tablespoons olive oil
- 2 leeks (white and pale green parts only), quartered lengthwise, sliced
- 1 1/2 cups chopped red onion
- 1/2 cup chopped shallots
- 2 tablespoons minced garlic
- 2 teaspoons chopped fresh thyme or 3/4 teaspoon dried
- 3 tablespoons mayonnaise
- 2 tablespoons chopped fresh chives or green onions
Directions

1Heat olive oil in heavy large skillet over medium heat.

2Add leeks, onion, shallots, garlic and thyme.

3Season with salt and pepper.

4Saute until vegetables are crisp-tender, about 5 minutes.

5Transfer to bowl and cool.

6Add mayonnaise and chives to onion mixture.

7Season salsa to taste with salt and pepper.
