- 5 meduim russets peeled and diced
- 5 carrots, peeled and diced
- 1 can sweet corn, drained
- 1 can peas, drained
- 48 oz V-8 juice

1Preheat oven to 350F

2Place oil and onion in frying pan. Let onions carmalize a bit.

3Add the meat. Brown until crumbled, but still a bit pink.

4Drain

5Place all ingredients into a baking dish

6Bake at 350 for an hour or until potatoes and carrots are fork tender
