  • 1-2 T olive oil
  • 1 small onion diced
  • 1 lb ground chuck
  • 5 meduim russets peeled and diced
  • 5 carrots, peeled and diced
  • 1 can sweet corn, drained
  • 1 can peas, drained
  • 48 oz V-8 juice

    Preheat oven to 350F

    Place oil and onion in frying pan. Let onions carmalize a bit.

    Add the meat. Brown until crumbled, but still a bit pink.

    Drain

    Place all ingredients into a baking dish

    Bake at 350 for an hour or until potatoes and carrots are fork tender
