  • 6 x strips bacon
  • 1 med onion, minced
  • 2 x potatoes, peeled and cubed
  • 1/2 c. water
  • 2 c. lowfat milk
  • 2 can (17 ounces each) cream style corn
  • 1 can (16 ounces) whole kernel corn, liquid removed
  • 1/2 tsp salt
  • grnd black pepper

Directions

    Fry bacon in a Dutch oven till crisp; remove bacon, reserving 2 Tbsp.

    Crumble bacon and set aside.

    Saute/fry onion in reserved drippings till tender; add in potatoes and water.

    Cover and simmer 15 to 20 min or possibly till potatoes are tender.

    Stir in lowfat milk, corn, salt, and pepper to taste; continue to cook, stirring frequently, till heated through.

    Sprinkle with crumbled bacon to serve.
