- 1 (16 oz.) can corned beef hash
- 2 eggs
- 1 to 2 Tbsp. butter
- dash of salt and pepper
Directions

1Empty hash into a shallow pie plate or dish.

2With a silver spoon, make 2 round wells in hash.

3Break eggs into wells and dot with butter, salt and pepper.

4Cook in a slow oven at 325° until eggs are firm.

5You can also dress this up with a sprinkling of grated cheese and buttered bread crumbs.

6Serve with a canned peach half filled with mincemeat on lettuce as a salad.
