- 3 corn tortillas, cut into 2-inch strips
- 3 tablespoons butter or 3 tablespoons margarine
- 12 cup chopped onion
- 1 (14 1/2 ounce) candel monte stewed tomatoes (Seasoned with Garlic, Jalapenos & Mexican spices)
- 1 cup cooked ham, cut into thin strips or 1 cup shredded turkey
- 12 cup green pepper strip
- 6 eggs, beaten
- 34 cup shredded monterey jack cheese
Directions

1Cook tortilla strips in butter in large skillet until golden.

2Remove and set aside.

3Cook onion in same skillet until tender.

4Drain tomatoes reserving liquid.

5Add reserved liquid to skillet; cook over high heat for 3 minutes, stirring frequently.

6Stir in tomatoes, meat and green pepper; heat through.

7Reduce heat to low; add tortillas and eggs.

8Cover and cook 4-6 minutes or until eggs are set.

9Sprinkle with cheese; cover and cook 1 minute or until cheese is melted.
