- 2 whole Acorn Squashes
- 2 Tablespoons Olive Oil
- 1/2 teaspoons Salt
- 1/4 teaspoons Pepper
- 1/4 cups Brown Sugar
- 4 Tablespoons Butter
- 1/4 cups Walnuts, Chopped
- 1/4 cups Dried Cranberries
Directions

1Preheat oven to 400 degrees F. Cut the squash in half and use a spoon to remove the seeds. Cut each half into 4 wedges.

2Place the wedges in a large baking dish and drizzle with olive oil and sprinkle with salt, pepper and brown sugar. Bake the squash for about 1 hour, or until soft and caramelized around the edges.

3Remove the squash from the oven.

4In a small saucepan over medium heat, add the butter, walnuts and cranberries. Cook until the butter is melted, then drizzle over the squash and serve.
