Acorn Stuffed Squash

- 3 medium acorn squash
- 1/2 c. minced onion
- 3 Tbsp. butter
- 1/2 c. chopped walnuts
- 2 c. cooked brown rice
- 2 eggs, beaten
- salt and pepper
- 1/4 tsp. nutmeg
- 2 c. grated Cheddar cheese
Directions

1Halve squash lengthwise and remove strings and seeds.

2Bake, covered with foil, until tender, about 25 minutes in a 375° oven. Scoop out flesh, leaving about 1/4-inch shell.

3Mash squash well. Saute onion in butter until soft and mix with squash, walnuts, rice, eggs and seasonings.

4Heap squash mixture into shells and bake 10 to 15 minutes in a 350° oven.

5Top with cheese in the last few minutes.

6Serves 6.
