  • 1 1/4 cups wheat flour
  • 1 1/2 teaspoons sugar
  • 1/2 teaspoon baking powder
  • 1 pinch salt
  • 2 eggs
  • 1 cup whole milk
  • 1 3/4 tablespoons melted butter

Directions

    In a bowl, mix flour, sugar, baking powder and salt.

    In a small bowl mix the egg yolks, milk, and melted butter. Add this mixture to the dry ingredients, stirring with a wooden spoon.

    In another bowl, beat egg whites until very firm. Add gently to the previous mixture.

    Heat the pan, pour a small piece of butter in each indentation. When the butter sizzles, pour a small ladle of batter. When the edges are cooked, using a wooden pin, turn the aebleskivers to cook the other side.

    Two techniques: either you flip them all at once, or you flip them 1/4 at a time.

    Serve warm with icing sugar and strawberry jam.
