Ingredients

  • 1 (3 to 4 lb.) chicken, cut (bone if you wish)
  • 2 Tbsp. Tabasco sauce
  • 15 oz. can tomato sauce
  • 10 oz. can chicken broth
  • 1 Tbsp. lemon juice
  • 1/2 tsp. thyme
  • 1/2 tsp. nutmeg
  • 1/2 c. peanut butter
  • 1/4 c. chopped onion
  • flour to cover chicken
  • small amount of oil to brown chicken

Directions

    Rub chicken with Tabasco sauce.

    Roll in flour.

    Lightly brown in hot oil.

    Put into baking dish.

    Saute onion in browning pan. Add oil if necessary.

    Add all other ingredients to pan.

    Stir until hot and bubbly.

    Pour over chicken.

    Bake at 350° for 45 minutes or cook in covered electric frypan.

    Serve with brown rice or mashed potatoes.
