- 4 lbs chicken pieces
- 14 cup vegetable oil
- 1 teaspoon salt
- 1 teaspoon curry powder
- 1 large onion (peeled and sliced)
- 1 large sweet red pepper (cut into strips)
- 1 large tomatoes (chopped)
- 1 12 cups uncooked rice
- 14 cup crunchy peanut butter
- 14 cup warm water
Directions

1Brown chicken in vegetable oil in large frying pan; set aside.

2Remove all but 2 tablespoons of oil and drippings in pan.

3Stir in curry powder and salt, onion, red pepper, tomato and rice.

4Cover and simmer 5 minutes; return chicken to pan.

5Cover; simmer until chicken is tender.

6Remove chicken to large platter.

7Blend peanut butter and water; stir into vegetables.

8Heat to boiling.

9Spoon over chicken.
