- 1 tablespoon canola oil
- 5 cloves garlic minced
- 2 teaspoons paprika
- 1 teaspoon cumin ground
- 1 teaspoon coriander ground
- 3 cups carrots sliced
- 3/4 cup water
- 2 1/2 tablespoons lemon juice
- 1 x salt to taste
- 1/4 cup cilantro freshly chopped
Directions

1Heat oil in a large nonstick skillet over medium heat.

2Add garlic, paprika, cumin and coriander; cook, stirring, until fragrant but not browned, about 30 seconds.

3Add carrots, water, lemon juice and salt; bring to a simmer.

4Reduce heat to medium low, cover and cook until almost tender, 5 to 7 minutes.

5Uncover and simmer, stirring often, until the carrots are just tender and the liquid is syrupy, 6 to 8 minutes.

6Stir in cilantro leaves.

7Serve hot.
