Alaskan Moose Roast

Ingredients

  • 1 medium moose rump roast
  • 1/4 c. shortening or bacon grease
  • 1 pkg. Lipton onion soup mix or 1 c. chopped onion
  • 2 cloves chopped garlic or powdered garlic to taste
  • 1/4 tsp. pepper
  • 1 (4 oz.) can mushroom pieces or 1 lb. sauteed, fresh mushrooms
  • 1 beef bouillon cube
  • 1 c. water
  • 6 to 8 carrots, peeled (whole)
  • celery chunks
  • 3 Tbsp. cornstarch and water (added to make paste)

Directions

    Braise moose roast in shortening/bacon grease on both sides until golden brown.

    Put braised roast in roasting pan.

    Surround with vegetables and cover with aluminum foil.

    Bake at 350° for 2 hours.

    Reserve drippings; add desired amount of water to make gravy.

    Bring to boil and thicken with cornstarch paste.

    Serves 6 to 8.
