- 213 grams salmon, canned
- 750 grams potatoes cooked, thinly sliced
- 1 each leeks washed and thinly sliced
- 2 tablespoons fromage frais, low fat
- 2 tablespoons sunflower oil
- 1 x salt and black pepper
- 50 grams cheddar cheese
Directions

1Preheat oven to 190 C; 375F (190C), Gas mark 5.

2Grease a shallow casserole dish.

3Drain can of salmon, flake and set aside.

4Arrange one third of potatoes and half of leeks in casserole dish.

5Add half the salmon then a further third of potatoes and remaining leeks and salmon.

6Sprinkle over the cheese and cover with remaining potato.

7Mix the milk, fromage frais and 1 tablespoon of oil.

8Season.

9Pour into casserole.

10Brush top layer with remaining oil, cover and bake for 45 minutes.

11Remove cover.
-
12Continue baking until brown.
