Albacore With Rice

Ingredients

  • 1/2 c. chopped onion
  • 2 Tbsp. butter
  • 1 3/4 c. water
  • 1 1/2 c. assorted fresh vegetables (pea pods, carrots, mushrooms, zucchini, broccoli, red peppers)
  • 3/4 c. uncooked long grain rice
  • 2 tsp. Wyler's chicken flavor instant bouillon
  • 1 1/2 tsp. basil leaves
  • 1/4 tsp. pepper
  • 2 cans solid white albacore in water, drained
  • 3/4 c. shredded Cheddar cheese

Directions

    In large saucepan, cook onion in butter until tender.

    Stir in remaining ingredients, except tuna and cheese; bring to a boil. Cover and simmer 15 minutes or until rice is tender.

    Stir in tuna and 1/2 cup cheese.

    Top with remaining cheese, just before serving.

    Refrigerate leftovers.
