Albacore With Rice

- 1/2 c. chopped onion
- 2 Tbsp. butter
- 1 3/4 c. water
- 1 1/2 c. assorted fresh vegetables (pea pods, carrots, mushrooms, zucchini, broccoli, red peppers)
- 3/4 c. uncooked long grain rice
- 2 tsp. Wyler's chicken flavor instant bouillon
- 1 1/2 tsp. basil leaves
- 1/4 tsp. pepper
- 2 cans solid white albacore in water, drained
- 3/4 c. shredded Cheddar cheese
Directions

1In large saucepan, cook onion in butter until tender.

2Stir in remaining ingredients, except tuna and cheese; bring to a boil. Cover and simmer 15 minutes or until rice is tender.

3Stir in tuna and 1/2 cup cheese.

4Top with remaining cheese, just before serving.

5Refrigerate leftovers.
