All-Purpose Spinach Paste

Ingredients

  • 1 1/2 bunches Spinach
  • 1/2 can Whole canned tomatoes
  • 1 Onion
  • 2 stalks Celery
  • 2 pieces Ginger
  • 1 dash Salt
  • 1 tsp Vegetable oil
  • 1/2 tsp Vegetable bouillon granules
  • 1 pinch Sugar
  • 200 ml Water (soy milk)

Directions

    Mince the onion, celery, and ginger.

    Microwave the onion for 5 minutes.

    After the onion has heated, saute all the vegetables in olive oil.

    Boil the spinach and then roughly chop into pieces.

    Add the water (or soy milk), tomato, spinach, and cooked onion, in that order, to a blender and blend until a paste is formed.

    Use a blender if possible.

    Return everything to a pot and add the salt and sugar.

    Simmer for just a short time and it's all done.

    Serve with brown rice and garnish with some extra cooked onion and celery.
