  • 2 lb. firm apples
  • 1 1/4 c. sugar
  • 3/4 c. water
  • 1/2 tsp. nutmeg
  • 1 Tbsp. grated lemon rind
  • 1/2 tsp. almond extract
  • 1/2 tsp. vanilla extract
  • pastry for 9-inch pie
  • 1/4 c. blanched almonds

    Peel and core apples; slice in 1/8-inch slices.

    Dissolve sugar and water over medium heat.

    Add apples, nutmeg and lemon rind. Cook slowly at 450° for 12 minutes or until golden brown.
