Almond Apple Pie

  • 200 g butter, chilled
  • 100 g clarified butter
  • 400 g + 3 tbsp plain flour
  • 1 tsp salt
  • 2 tbsp caster sugar
  • 1.5 kg cooking apples, peeled, cored and thinly sliced
  • 1 tsp ground cinnamon
  • 3 tbsp lemon juice
  • 125 ml + 3 tbsp maple syrup
  • 5 tbsp ground almonds

    Dice the butter and clarified butter and freeze for 30 mins. Mix 3 2/3 cups flour, the salt and sugar in a bowl. Add frozen butters using fingertips to form the mixture into a fine crumb. Gradually add 2/3 cup ice-cold water and knead briefly. Roll out pastry on a floured work surface to form a circle, wrap in foil and chill for 2 hours.

    Preheat oven to 400°F. Grease and flour a 10 x 2 inch tart pan. Toss sliced apples in cinnamon, lemon juice, 1/2 cup maple syrup, 3 tbsp ground almonds and 3 tbsp flour. Roll out half the chilled pastry on a floured work surface to form a 12 inch circle and transfer to the tart pan. Press gently into place and sprinkle with 2 tbsp ground almonds.

    Fill the pie case with the apples, mounding them up slightly. Brush the rim of the case with 1 tbsp maple syrup. Roll out the remaining pastry on a floured surface to form a 11 inch circle and fit on top of the pie. Trim edges and pinch to make a neat seal. Make four 2 inch cuts in the middle and brush cover with 1 tbsp maple syrup.

    Bake low in the oven for 45 mins covering with foil if necessary. When cooked sprinkle with sugar and serve warm.
