Almond Chicken

  • 2 chicken breasts
  • 2 chicken thighs
  • celery leaves
  • salt and pepper
  • 1 c. diced celery
  • 1 c. diced onion
  • margarine
  • 6 oz. sharp Cheddar, grated
  • 1 (2 1/4 oz.) pkg. slivered almonds
  • 1 c. mayonnaise (preferably Hellmann's)
  • plain bread crumbs

Directions

    Cook breasts and thighs in water with salt, pepper and celery leaves.

    Simmer until tender.

    Cool, bone and dice.

    Saute onions and celery in margarine.

    Combine chicken, onions, celery and cheese with mayonnaise and almonds.

    Place in casserole (preferably rectangular).

    Sprinkle top with bread crumbs.

    Bake at 350° until bubbly and golden.
