Almond Cookies

  • 3 c. flour
  • 1 c. sugar
  • 1 c. shortening or margarine
  • 4 Tbsp. corn syrup
  • 1 egg
  • 3 Tbsp. almond extract
  • 1 1/2 tsp. baking soda
  • 1 c. blanched almonds

Directions

    Cream shortening and sugar together, then add beaten egg. Slowly add flour, baking soda, almond extract and corn syrup.

    Mix until smooth.

    Make cookie size balls out of all the dough. Flatten each ball and place an almond in the center of each one. Bake at 375° on a greased cookie sheet for about 20 minutes.

    Makes about 4 dozen.

    Best if made ahead of time and frozen before use.
