Almond Potato Cake

- 1 cup water
- 1/2 teaspoon salt
- 1 package potatoes, instant 4 serving size box, mashed
- 13 cup butter or margarine
- 1 cup sugar
- 2 large eggs
- 3/4 teaspoon almond extract
- 3/4 cup almonds ground
Directions

1Boil water and salt.

2remove from heat and stir in potatoes.

3cool.

4cream butter and sugar until light.

5beat in eggs one at a time, then almond extract, almonds and cooled potatoes.

6Turn into a greased and floured 8 inch square baking pan.

7Bake 350F (180C) F for 50 minutes or tested done.

8Cool in pan 10 minutes.

9Remove from pan and cool completely.

10Sprinkle with powdered sugar.

11serve a custard sauce on the side.
