- 1/4 c. butter
- 1 1/2 c. uncooked rice
- 3/4 lb. fresh mushrooms
- 1 onion, finely chopped
- pepper to taste
- 3 c. beef consomme
- 1/2 c. chopped almonds
- 2 Tbsp. poppy seed
- salt to taste
Directions

1Melt butter in heavy saucepan.

2Add rice and brown.

3Add mushrooms, onions and pepper.

4Saute until onion is tender. Remove from heat.

5Add consomme, almonds, poppy seed and salt. Mix well.

6Spoon into buttered 2-quart casserole.

7Bake at 375° for 1 hour.

8Serves 6 to 8.
