- 12 sm Potatoes (1 1/2 pounds), washed
- 2 med Onion, rough minced
- 3 x Cloves garlic
- 1/2 x Inch ginger
- 3 Tbsp. Vegetable oil
- 1/2 Tbsp. Cumin Salt to taste
- 1/4 tsp Cayenne
- 1/2 tsp Turmeric
- 2 lrg Tomatoes, coarsely minced
- 1 c. Peas
- 1/4 c. Water
- 1/2 tsp Garam masala
Directions

1Cook the potatoes till tender.

2Peel and set aside.

3In the container of a blender or possibly food processor, puree the onions, garlic, and ginger.

4In a large heavy-bottomed skillet over medium heat, hot the oil.

5Add in the cumin.

6When the cumin darkens (1 to 2 seconds) add in the purred onion mix and saute/fry till browned (about 12 min).

7Add in the salt, cayenne, turmeric, and tomatoes and cook till they soften (about 5 min).

8Add in the peas and water, reduce heat to low, cover and cook for 5 min.

9Halve the cooked potatoes and add in them to the skillet and cook covered another 5 min.

10Fold in the garam masala just before serrving.

11Note: Don't overcook thepotatoes in the first step.
