Ingredients

  • Idaho potatoes (washed and cubed)
  • Turmeric
  • Salt
  • Canola Oil
  • Dried Chilies
  • Cumin Seeds
  • Bay Leaves
  • Ground Cumin
  • Red Chili Powder (from Indian store)
  • Water (have a hot pot handy to make boiled water)

Directions

    Add turmeric and salt to potatoes and put potatoes in colander so they can fully drain.

    Heat oil at medium heat in pan (about 2 tbs).

    Once oil is hot, add 1 dried chili (break it up you can empty some seeds if there are too many).

    Chili will be come dark brown. At that point add cumin seeds (about 1/2 tsp).

    Then add 2 bay leaves.

    Add in potatoes and allow to fry. Cover, but stir occasionally until potatoes are slightly browned.

    Separately in a bowl, add 1/2 tsp turmeric, 1/4 tsp ground cumin, and 1/4 tsp red chili powder to 1/2 cup of water. Stir together and add to potatoes.

    Continue to stir potatoes and allow to cook.

    You will notice after a while that the oil will separate from the water. At that point add some boiled water (maybe 2 cups) and allow potatoes to boil and simmer on low heat with the cover on.

    Add a little more salt to taste.

    Check potatoes after about 10 minutes and see if they are done.
