Amaretto Cake

  • 1 1/2 c. sliced almonds or pecans
  • 1 yellow cake mix
  • 1 small box vanilla pudding mix
  • 3 eggs
  • 1/3 c. oil
  • 1/4 c. Amaretto
  • 3/4 c. orange juice
  • 1 1/2 tsp. almond extract

Directions

    Spread almonds on baking sheet and bake 8 to 10 minutes at 325°.

    Remove and set aside.

    Grease and flour a Bundt pan. Sprinkle 1/2 cup almonds in bottom of pan.

    In mixing bowl combine cake mix, pudding mix, eggs, oil, Amaretto, orange juice and almond extract.

    Beat until fluffy.

    Fold in remaining ingredients.

    Pour into pan and bake 1 hour at 325° or until tested done.
