- 1 large orange
- 1 1/2 c. sugar
- 1/4 tsp. salt
- 1 (3 1/2 oz.) can flaked coconut
- 1 pkg. yellow cake mix
- 3 Tbsp. cornstarch
- 1/3 c. margarine
- 1 (6 1/2 oz.) pkg. fluffy white frosting mix
Directions

1Peel, section and seed orange.

2Whirl orange in blender. Prepare cake mix by package directions.

3Fold 1/3 cup orange into batter and bake in 2 (8-inch) layer cake pans as directed on package.

4Cool.

5In saucepan, combine sugar, cornstarch and salt. Add margarine, 1 cup water and remaining orange.

6Bring to boil, stirring, and cook

72 minutes.

8Cool and stir in coconut.

9Split each layer and spread each layer and top with mixture.

10Prepare frosting as directed on package and spread on sides of cake. Garnish top with halved maraschino cherries.
