Ingredients

  • 1 green papaya, medium-size, grated
  • 1 red pepper, sliced in strips
  • 1 green pepper, sliced in strips
  • 1 small carrot, sliced in strips
  • 1 small ginger, cut in strips
  • 1 big onion, peeled and sliced
  • 3 tbsp rock salt
  • 3 cup vinegar
  • 1 1/2 cup sugar
  • 2 tsp salt

Directions

    Squeeze all the vegetables in rock salt.

    Let stand for 1 hour then press out liquid.

    Place all the vegetables in a bowl or sterilized jar.

    Combine vinegar, salt and sugar and cook over medium heat til boiling.

    Remove scum.

    Let it boil for another 2-3 minutes then pour into container with vegetables.

    Note: If achara is to be stored, seal container immediately.
