  • 4 medium eggs
  • 2 tbsp butter
  • 150 grams buffalo mozzarella, sliced or torn
  • 1 fresh basil leaves
  • 1 salt and freshly ground black pepper

Directions

    Slice off the tops of eggs.

    Place eggs in a mixing bowl and beat with salt and pepper.

    Add the basil leaves.

    Melt butter in a small non-stick saucepan over low-medium heat.

    Add the mozzarella and stir until melted.

    Add the beaten eggs and stir until just set.

    Fill the empty eggs with mixture and top with fresh basil leaves.
