- 4 medium eggs
- 2 tbsp butter
- 150 grams buffalo mozzarella, sliced or torn
- 1 fresh basil leaves
- 1 salt and freshly ground black pepper
Directions

1Slice off the tops of eggs.

2Place eggs in a mixing bowl and beat with salt and pepper.

3Add the basil leaves.

4Melt butter in a small non-stick saucepan over low-medium heat.

5Add the mozzarella and stir until melted.

6Add the beaten eggs and stir until just set.

7Fill the empty eggs with mixture and top with fresh basil leaves.
