- 2 Tbsp. butter, melted
- 3 scallions, trimmed and cut into rounds
- 2 Tbsp. flour
- 2 c. milk
- 4 eggs
- 1 tsp. salt
- fresh ground pepper
- 1/2 tsp. nutmeg
- 4 c. fresh corn kernels*
Directions

1Preheat oven to 375°.

2Grease a baking dish.

3Melt 1 tablespoon of butter in small skillet over medium heat.

4Add scallions and cook for 4 minutes.

5In small bowl whisk together flour and 1/2 cup milk until smooth.

6In large bowl whisk together eggs, remaining milk and seasonings.

7Add milk and flour mixture plus remaining 1 tablespoon melted butter.

8Whisk well to combine. Quickly stir in corn and scallions and pour mixture into dish. Bake 50 minutes to 1 hour.

9Will jiggle a little, but should not be liquid in center.
