Ingredients
- 1 1/2 c. water
- 1 tsp. salt
- 1/3 c. yellow cornmeal
- 1/3 c. molasses
- 1 1/2 Tbsp. shortening
- 1 pkg. dry yeast
- 1/4 c. lukewarm water
- 4 to 4 1/2 c. flour
Directions

1Bring salted water to boil in saucepan.

2Add cornmeal, stirring constantly.

3Remove from heat and stir in molasses and shortening.

4Cook to lukewarm.

5Mix yeast with 1/4 cup water and let stand 5 minutes.

6Blend yeast into cornmeal mixture, then mix in flour first with a spoon, then by hand.

7Dough will be sticky. Knead and let rise until double (1 1/2 hours).

8Punch down and turn into greased loaf pan.

9Let rise until double (about 1 hour). Brush top with melted butter.

10Bake at 375° for 40 to 45 minutes. Makes 1 loaf.

11May be frozen.
