- 2 pounds Chicken Breast, Cubed
- 1 whole Onion
- 1/2 Tablespoons Fresh Cilantro
- 3 cloves Garlic, Minced
- 1/2 cups Olive Oil
- 2 Tablespoons Ground Cumin
- 1 Tablespoon Ground Coriander
- 1 teaspoon Cayenne Pepper
- Pita Bread, To Serve
Directions

1Cut the chicken breasts into 1 cubes and place in a sealable plastic bag.

2In a food processor, puree the onion, cilantro and garlic.

3Once pureed, place in a medium-size mixing bowl and add the olive oil, cumin, coriander and cayenne pepper.

4Mix well and pour into the bag with the chicken.

5Shake the bag around to coat the chicken and refrigerate for a minimum of six hours, or up to overnight.

6While heating the grill or broiler, thread the chicken onto skewers.

7Place skewers on the grill or in the broiler and heat until cooked thoroughly, approximately 45 minutes per side.

8Make sure to baste the chicken throughout the cooking process with the extra marinade.

9Do not overcook and dry out the chicken.

10Serve immediately inside a pita with couscous or lemon wedges.
