Ingredients

  • 1/2 c. corn meal (yellow or white)
  • 1 pkg. dry yeast
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 1 c. flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 c. oil
  • 2 c. buttermilk
  • 2 eggs, well beaten

Directions

    Mix dry ingredients together well (excluding yeast).

    Dissolve yeast in 1/4 cup warm water.

    Mix together well the dissolved yeast, oil and buttermilk with the dry ingredients.

    Pour batter into a well-greased cornbread stick or muffin pans and bake at 450° for 12 to 15 minutes.

    Makes 3 dozen.

    Serve hot or cold.
