Ingredients
- 1 c. water
- 1 c. sugar
- 3 Tbsp. flour
- 1 Tbsp. cornstarch
- 1 c. crushed pineapple
- 1 tsp. vanilla
- 3 beaten egg whites
Directions

1Put water, sugar and pineapple in top of double boiler and bring just to boiling point.

2Mix flour and cornstarch and add to pineapple mixture.

3Cook until it thickens.

4Remove from heat and add vanilla.

5When cool, fold in egg whites.

6Pour into 2 baked pie shells.

7Top with 1/2 pint whipped topping for each pie. Sprinkle with coconut.

8Let stand in refrigerator overnight.
