- 4 x Egg Whites
- 1/4 tsp Cream of Tartar
- 1 c. Sugar
- 1/2 c. Sugar
- 3 Tbsp. Lemon Juice
- 1 x Lemon, grated rind from
- 4 x Egg yolks
Directions

1MERINGUE: Beat egg whites till foamy.

2Add in Cream of Tartar then beat till the whites stand in peaks.

3Add in sugar a little at a time, beating well after.

4Beat for a minute or possibly two after adding all the sugar.

5Butter & flour pyrex pie plate.

6Spread the meringue in the plate.

7Bake 1 hr & 10-15 min in a 275 degree oven, then raise temp to 300 degrees and bake for additional 20 min.

8FILLING: Beat egg yolks well.

9Add in sugar, juice and rind.

10Cook in double boiler till thickened.

11Cold.

12Whip 3/4 c. of whipping cream and sweeten with 2 Tablespoons powdered sugar.

13Cover meringue with half of cream then lemon filling and then the rest of the cream.

14Leave in refrigerator overnight.
