  • 2 beef hearts
  • 10 Tbsp. ground hot pepper
  • 1 Tbsp. ground achiote
  • 2 c. vinegar
  • 1 c. minced garlic
  • 2 1/2 tsp. cumin
  • salt and pepper to taste
  • 1/4 c. olive oil
  • 4 doz. small potatoes
  • hot salsa

    Wash beef hearts well, removing all nerves and fat.

    Cut into 1-inch cubes.

    Place in enamel bowl, along with all other ingredients.

    Marinate for 24 to 48 hours.
