- 1 c. vegetable oil
- 2 c. sugar
- 2 eggs
- 1 tsp. vanilla
- 3 c. flour
- 1 tsp. cinnamon
- 1 tsp. baking soda
- 1/2 tsp. salt
- 3 c. raw apples, diced in small cubes
- 1/2 c. nuts, chopped
- 1/2 c. coconut or raisins
Directions

1Place oil, sugar, eggs and vanilla in large mixer bowl; beat until combined.

2Sift together flour, cinnamon, baking soda and salt; add to oil mixture.

3Stir in apples, nuts and coconut or raisins.

4Spread batter in lightly greased 15 1/2 x 10 1/2-inch jelly roll pan.

5Bake at 350° for 30 to 45 minutes until top springs back when touched lightly.
