  • 1 c. vegetable oil
  • 2 c. sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 3 c. flour
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 3 c. raw apples, diced in small cubes
  • 1/2 c. nuts, chopped
  • 1/2 c. coconut or raisins

Directions

    Place oil, sugar, eggs and vanilla in large mixer bowl; beat until combined.

    Sift together flour, cinnamon, baking soda and salt; add to oil mixture.

    Stir in apples, nuts and coconut or raisins.

    Spread batter in lightly greased 15 1/2 x 10 1/2-inch jelly roll pan.

    Bake at 350° for 30 to 45 minutes until top springs back when touched lightly.
