Apple Burritos

  • 6 to 7 apples, washed, cored and sliced (not peeled)
  • 1/2 c. frozen apple juice concentrate
  • 3 c. pineapple juice
  • 3 Tbsp. cornstarch
  • 1 doz. whole wheat flour tortillas

Directions

    Cook apples in apple juice concentrate slowly until tender. Set apples aside and heat pineapple juice and thicken with cornstarch mixed with a little water to make a paste.

    Cook until clear and bubbly, stirring.

    Fold 1 cup pineapple thickened juice into cooked apples.

    Place 1/3 cup apples on center of each tortilla.

    Roll tortilla and place seam side down in a 9 x 13-inch baking pan sprayed with vegetable spray.

    Cover with remaining pineapple juice.

    Bake, covered, at 350° for about 20 minutes until heated through.

    Serve hot or cold.

    You may add raisins or nuts, if desired.
