Ingredients
- 4 lb. tart apples
- 2 c. mild cider vinegar
- 5 c. sugar
- a few grains of salt
- 2 tsp. cinnamon
- 1 tsp. cloves
- 1/2 tsp. allspice
- 1 grated lemon rind
- juice of 1 lemon
Directions

1In a large, heavy pot, place apples.

2Cover with cider vinegar and cook until soft.

3Add sugar, salt, cinnamon, cloves, allspice, lemon rind and lemon juice.

4Cover tightly.

5Cook over low heat until sugar dissolves.

6Uncover and cook quickly, until thick and smooth.

7Stir with wooden spoon so mixture won't stick and burn.
