Apple Cake

  • 1 1/4 cups cake flour (not self rising)
  • 1 tsp. baking powder
  • 8 Tblsp. butter (1 stick)
  • 10 Tbsp. sugar
  • 1 large egg
  • 3 large ripe plums (or 2 granny smith apples)
  • 1 Tbsp. lemon juice
  • 1/2 tsp. cinnamon

    Preheat oven to 375 degrees.

    Grease a 9 inch cake pan.

    Melt 6 Tbsp. butter over low heat or in microwave
  4. 4
    Stir 6 Tbsp. sugar into butter.

    Let cool 10 mins.

    Add egg to butter mix and stir well.

    Serve plain or with whip cream or ice cream

    Mix dry ingredients together then add to butter mix.

    Spread in round 9 inch cake pan with back of a spoon.

    Peel apples, quarter, slice thin. Mix apples w/ lemon juice. Push apples slices into cake pan in a circular pattern. Sprinkle w/ sugar and cinammon. Dot with remaining butter cut into small pieces.

    Bake 25 - 35 mins (depending on fruit) until center is done.
