  • 3 c. MacIntosh apples, cored, peeled and diced
  • 3 c. flour
  • 2 eggs
  • 2 c. sugar
  • 1 1/2 c. vegetable oil
  • 1 tsp. vanilla
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 c. chopped walnuts or pecans

Directions

    Dredge apples and nuts thoroughly with 1 cup of the flour. Beat eggs and sugar together; add oil and vanilla, then dry ingredients.

    Add apple and nut mixture.

    Mix until apples and nuts are evenly distributed through the batter.

    The batter will be thick.

    Bake in a buttered Bundt pan for 1 hour at 375°.
