Ingredients: 3 c. chopped apples; 3 c. all-purpose flour; 3 eggs; 2 c. sugar; 1 1/2 c. vegetable oil; 1 tsp. soda; 1/2 tsp. salt; 1 tsp. vanilla; 1 c. nuts; 1/2 tsp. cinnamon; 1/2 tsp. nutmeg; 1 box confectioners sugar; 1 stick margarine; juice and rind of 1 lemon

3 c. all-purpose flour

2 c. sugar
1 1/2 c. vegetable oil
1 tsp. soda
1/2 tsp. salt
1 tsp. vanilla
1 c. nuts
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 box confectioners sugar
1 stick margarine
juice and rind of 1 lemon

Directions

Sift flour, soda and salt; make a well in the dry ingredients. Add sugar, eggs and oil. Beat until well blended. Add apples, nuts, vanilla and spices. Bake in loaf pan at 350° until done. Cool and ice with confectioners sugar, margarine and juice and rind of 1 lemon.
