  • 1 1/2 c. Wesson oil
  • 1/4 c. orange or lemon juice
  • 3 eggs
  • 3 c. Swans Down cake flour
  • 1 tsp. soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 c. chopped apples (Granny Smith)
  • 1 c. chopped nuts (pecans or walnuts)
  • 1 c. canned coconut

Directions

    Preheat oven to 325°.

    Add first 4 ingredients together and beat until blended.

    Mix together next 4 ingredients and add to first mixture.

    Next add apples, coconut and nuts; mix well.

    Pour into greased and floured tube pan.

    Bake 1 hour and 20 minutes.
