Apple-Carrot Quick Bread

  • 1 1/2 c. shredded apples
  • 1/2 c. shredded raw carrots
  • 1/4 c. butter, softened
  • 1 tsp. lemon extract
  • 2 eggs
  • 1 3/4 c. sifted flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. sugar
  • 1/2 c. chopped walnuts

Directions

    In a bowl blend apples and carrots.

    Add butter, lemon extract and eggs.

    Beat to mix.

    Sift together flour, sugar, powder, soda and salt.

    Add to apple and carrot mixture.

    Stir in nuts if desired.

    Mix well.

    Bake in greased and floured bread pan.

    Bake at 350° for about 1 hour or until done when tested with toothpick. Cool in pan 10 minutes before removing.

    Put bread on a rack to complete cooling.
