Apple-Carrot Quick Bread

Ingredients
- 1 1/2 c. shredded apples
- 1/2 c. shredded raw carrots
- 1/4 c. butter, softened
- 1 tsp. lemon extract
- 2 eggs
- 1 3/4 c. sifted flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 c. sugar
- 1/2 c. chopped walnuts
Directions

1In a bowl blend apples and carrots.

2Add butter, lemon extract and eggs.

3Beat to mix.

4Sift together flour, sugar, powder, soda and salt.

5Add to apple and carrot mixture.

6Stir in nuts if desired.

7Mix well.

8Bake in greased and floured bread pan.

9Bake at 350° for about 1 hour or until done when tested with toothpick. Cool in pan 10 minutes before removing.

10Put bread on a rack to complete cooling.
