Apple Chicken Casserole

  • 1/4 c. chopped green pepper
  • 2 Tbsp. butter or margarine
  • 2 Tbsp. flour
  • 1/2 tsp. ground ginger
  • dash of pepper
  • 3/4 c. milk
  • 1 1/2 c. (6 oz.) shredded Cheddar cheese
  • 2 c. chopped Golden Delicious apples
  • 2 c. cooked rice
  • 1 1/2 c. chopped, cooked chicken
  • 1/3 c. slivered almonds, toasted (optional)

Directions

    Saute green pepper in margarine; reduce heat.

    Blend in flour and seasonings.

    Gradually add milk, cook until thickened.

    Add 1 cup cheese and stir until melted.

    Stir in chopped apples, rice and chicken.

    Spoon into 1 1/2-quart casserole dish.

    Bake 30 minutes. Top with remaining cheese; garnish with apple slices and almonds, if desired.
