Apple-Cinnamon Bread Pudding

  • 1-1/2 gal. apples, unpeeled, sliced Safeway 1 lb For $0.99 thru 02/09
  • 1 cup Unsalted butter
  • 1-1/4 gal. Whole or 2% milk
  • 1-1/2 qt. JELL-O Vanilla Instant Pudding
  • 2 gal. cinnamon-raisin bread, cubed, toasted
  • 4 tsp. apple pie spice

Directions

    Saute apple slices in butter on medium heat until tender.

    Set aside to cool.

    Place milk and pudding mix in bowl of electric mixer fitted with paddle attachment.

    Beat on low speed until moistened.

    Beat on medium speed 2 minutes.

    Toss apples, bread cubes and apple pie spice in large bowl.

    Add pudding; stir gently until well blended.

    Pour into 2 full hotel pans (or 1 half hotel pan for trial recipe); cover.

    Refrigerate at least 1 hour to allow bread to moisten.
