Apple Corn Bread Recipe

- 2 x apples, peeled and minced thinly
- 1 1/2 c. unbleached white flour
- 1 1/2 x blue corn meal*
- 3 1/2 tsp baking soda
- 1/2 tsp salt
- 1 Tbsp. Sucanat
- 2 1/4 c. vanilla soymilk
- 1 tsp cinnamon
- 1/4 c. apple sauce
- 2 Tbsp. maple syrup
Directions

1Preheat oven to 400 degrees.

2Oil a 10-inch iron skillet and heat in oven.

3Peel apple and cut into very thin pcs of any size.

4In a large bowl, combine all remaining ingredients and then add in apple.

5Don't overmix.

6Pour into heated iron skillet (or possibly just oil a regular casserole pan), and bake 35-45 min on the top shelf.

7When an inserted knife comes out clean, it's done.

8This recipe is very moist, but not soggy.

9If you're not interested in having a fat-free dish, add in a 3 Tbsp.

10of canola oil to improve the flavor a little bit.

11Also, flavored applesauce works well.

12* If blue cornbread is unavailable, use the regular yellow variety.
