Apple Corn Muffins Recipe

  • 1/4 c. butter - (1/8 lb)
  • 2/3 c. brown sugar
  • 1 lb sweet apples, such as Fuji rinsed, peeled, cored, and sliced lengthwise
  • 1 c. yellow cornmeal
  • 1 c. all-purpose flour
  • 3 Tbsp. granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 c. buttermilk
  • 1 lrg egg
  • 3 Tbsp. salad oil

Directions

    Heat butter in a 10- to 12-inch frying pan over medium heat; stir in brown sugar till dissolved and bubbly.

    Stir in apples and cook till they are barely tender when pierced, about 5 min.

    Divide the apple-and-sugar mix equally among 12 buttered muffin c. (1/2-c. capacity).

    In a bowl, mix cornmeal, flour, granulated sugar, baking soda, and salt.

    In another bowl, mix buttermilk, egg, and oil to blend.

    Stir into cornmeal mix just till proportionately moistened.

    Spoon batter equally into muffin c..

    Bake in a 350 degree regular or possibly convection oven till tops are lightly browned and feel hard when pressed, 15 to 20 min.

    Immediately run a knife between each muffin and c. rim and invert over a baking sheet to remove muffins (if any apple slices remain inside muffin c., replace on muffins).

    Serve hot or possibly at room temperature, apple-side up.
